Ventisquero, the journey has begun!

Hello my dear friends! As we had already announced, an incredible wine dinner was held last Thursday at the successful Gran Inka (Dolphin Mall). Clients and guests of The Wine Chaser attended the glamorous event exceptionally hosted by Felipe Tosso, winemaker of Ventisquero, the featured winery. Felipe is a man with a long history in the world of wine who was recently awarded Winemaker of the Year by none other than Tim Aktins. Catalina Bräuchle, in charge of Public Relations at Ventisquero, along with Horacio Fuentes, Director of Export Sales for the Americas, also attended. Jorge Rordríguez, President of Classic Wines Florida and influencer Imaray Ulloa also joined us for the 'one of a kind' experience!


During the pairing, Ventisquero wines shone for their distinguished profile and finish. Dinner began with a glass of Sauvignon Blanc (Reserve). Nothing like this fresh white! It reveals the aromas of the varietal in a subtle blend of citrus and tropical fruit. Limes, grapefruit, pineapple and pears are complemented by floral notes and a mineral touch.


Tara, a Chardonnay from the Atacama Valley was the grand opening of the pairing experience. This is a fresh, nervous, mineral wine that feels tense and well structured on the palate. The chalk and salinity of the soil from which it comes, are perfectly reflected on the palate. As you sip the wine, it evolves in the glass. Tara is not a classic style of Chardonnay and we attribute this to its very particular and unique terroir. No wonder it scored 94 points through Robert Parker's Wine Advocate magazine; and 96 points with Tim Atkins. It paired remarkably well with Inka's iconic ceviche, a truly memorable pairing.


Grey, a fresh ruby-colored Pinot Noir, came with double fried green plantains topped with another Peruvian delicacy: ají de gallina. Grey shows great complexity, typical of the Leyda Valley, which translates into excellent acidity and mineral notes. Immediately afterwards, Vértice was served with a traditional stir-fry: Lomo Saltado with Tacu Tacu. Needless to say, this combination was a treat for the senses. Vértice shows an intense red color with violet hues, and on the nose it reveals a strong aroma of blackberry, intermingled with soft spices such as black pepper, moisty earth, notes of graphite... Among the best of Ventisquero's superior production line, this utterly elegant wine has a firm structure and silky tannins. Its powerful and yet gentle flavor, along with medium-high acidity, give it balance on the palate and persistence on the finish.


The dessert, a chocolate cake garnished with dulce de leche came with Enclave, a dark red wine that on the nose reveals red fruit such as plums and cherries, a touch of cassis and white pepper. Enclave has a very interesting aromatic complexity. In the mouth feels well well-structured wine with a firm yet silky smooth tannins that turn persistent in the finish. This pairing, in my opinion, stole the big night.


We want to thank all the attendees, our loyal customers and friends who after so long still follow us with tremendous curiosity! We also want to thank the incredible Ventisquero team for their trust and for this opportunity to collaborate. Also thanks to the team led by Liliana Vivanco at Gran Inka, for all the hard work! Not only was the food a real treat, the service was simply impeccable. Achieving such task in rigorous circumstances, where the temperature of the food and each wine are elements of unequivocal precision, is really difficult. However, the Gran Inka team stood out without any problems!
